Crust: Nabisco Zwieback, finely rolled ----- 6-oz. pkg.

           Sugar ------------------------------- 2 Tb.

           Softened butter --------------------- 1/2 cup


     Thoroughly blend ingredients together.

     Press mixture firmly in even layer on bottom and

     sides of a 9-inch spring-form pan.


Filling:  Cream cheese --------------------- 1 lb.

              Sugar ---------------------------- 1/2 cup

              Salt ----------------------------- 1/4 tsp.

              Flour ----------------------------   2 Tb.

              Vanilla --------------------------   1 tsp.

              Eggs, separated ------------------   4

              Light cream ----------------------   1 cup


Let cheese soften at room temperature.

Combine sugar, salt, flour.

Add to cheese and mix well.  Add vanilla.

Stir in 4 eggs, one at a time, mixing in completely.

Add light cream, blending thoroughly.

Beat egg whites stiff but not dry and carefully

fold into mixture.

Carefully pour into crust.

Bake in slow oven (325 F.) about 1 hour 20 minutes.

Cool thoroughly before removing from pan.
